Instructions

Step 1: Prepare the Beans
Drain the soaked beans and rinse them under cold water. Set aside while you prepare the rest of the soup.

Step 2: Sauté the Vegetables
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, and sauté until translucent, about 5 minutes. Stir in the minced garlic, sliced carrots, and diced celery, cooking for another 3-4 minutes until the vegetables are tender.

Step 3: Add the Pork
Incorporate the smoked pork or ham hock into the pot, stirring to mix flavors. If using diced pork, allow it to brown slightly for added flavor.

Step 4: Combine Ingredients
Add the soaked beans to the pot, along with the chicken or vegetable broth. Sprinkle in the dried thyme and add the bay leaves. Bring the soup to a boil.

Step 5: Simmer
Once the soup reaches a boil, reduce the heat to low. Cover the pot and let it simmer gently for 1 to 1.5 hours, or until the beans are tender. Check periodically, adding more broth or water if the soup becomes too thick.

Step 6: Season and Serve
Once cooked, season the soup with salt and pepper to taste. Remove the bay leaves and, if desired, shred any pork pieces back into the soup. Ladle the warm soup into bowls and garnish with freshly chopped parsley. Serve hot with crusty bread for a complete meal.
