  • 1 cup grated mozzarella cheese

Instructions

Step 1: Preheat the Oven

Begin by preheating your oven to 400°F (200°C). This temperature is perfect for roasting vegetables and baking the tart to golden perfection.

Step 2: Prepare the Vegetables

Wash and chop the mixed vegetables into small, even pieces. Place them on a baking sheet lined with parchment paper. Drizzle with olive oil, then sprinkle with dried thyme, salt, and pepper. Toss the vegetables to coat them evenly.

Step 3: Roast the Vegetables

Roast the vegetables in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized. Stir halfway through to ensure even cooking. Once done, remove them from the oven and allow them to cool slightly.
