Instructions

Step 1: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent and fragrant, about 5 minutes.

Step 2: Stir in the sliced carrots and diced sweet potatoes, allowing them to cook for an additional 5 minutes. This will enhance their flavors and textures.

Step 3: Add the vegetable broth and diced tomatoes to the pot. Stir in the dried thyme and rosemary, season with salt and pepper, and bring the mixture to a boil.
