Instructions

1. Prepare the Chickpeas

If you are using dried chickpeas, soak them overnight in plenty of water. The next day, drain and rinse before cooking. Abase your soaked chickpeas in a pot of water and bring to a boil. Cook for about 1 hour or until tender. If using canned chickpeas, simply drain and rinse them.

2. Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion turns translucent. This usually takes about 5 minutes.

3. Add More Vegetables

Stir in the diced carrots, bell pepper, and zucchini. Cook for another 5-7 minutes, stirring occasionally. The vegetables should begin to soften, releasing their natural flavors.

4. Combine the Ingredients

Next, add the cooked chickpeas, diced tomatoes, and vegetable broth to the pot. Stir well to combine all the ingredients.

5. Season the Stew

Add the dried thyme, rosemary, salt, and pepper to taste. Bring the mixture to a gentle boil, then reduce the heat, cover the pot, and let it simmer for about 30 minutes. This allows all the flavors to meld beautifully.
