How to Make French Garlic and Herb Soup

French garlic and herb soup, known as "Soupe à l'ail," is a comforting and flavorful dish that perfectly combines the rich taste of garlic with fresh herbs. This delightful soup is not only easy to make but also packed with nutrition. Follow this simple recipe to bring a taste of France to your kitchen.

Ingredients

  • 1 head of garlic
  • 4 cups vegetable broth (or chicken broth)
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • 1 teaspoon fresh parsley, chopped (plus extra for garnish)
  • 1 bay leaf
  • Salt and pepper to taste
  • Sourdough bread or croutons (for serving)

Instructions

Step 1: Prepare the Garlic

Start by preheating your oven to 400°F (200°C). Take the head of garlic and slice the top off to expose the cloves. Drizzle with a bit of olive oil and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes, or until the cloves are soft and caramelized.

Step 2: Sauté the Onions

While the garlic is roasting, heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the finely chopped onion and sauté until it's translucent, about 5-7 minutes. Stir occasionally to prevent burning.

Step 3: Add Broth and Herbs

Once the onions are ready, pour in the vegetable or chicken broth. Add the thyme, parsley, and bay leaf to the pot. Bring the mixture to a gentle simmer, allowing the flavors to meld for approximately 10 minutes.

Step 4: Incorporate Roasted Garlic

After the garlic is roasted, let it cool slightly before squeezing the cloves out of their skins directly into the soup. Remove the bay leaf, and blend the soup with an immersion blender until creamy. Alternatively, you can transfer it in batches to a regular blender, but be cautious of the heat.

Step 5: Season and Serve

Season the soup with salt and pepper to taste. If you prefer a thinner consistency, you can add more broth or water. Serve hot, garnished with extra chopped parsley and accompany with crunchy sourdough bread or croutons for added texture.
