How to Make French Vegetable Croquettes

French vegetable croquettes are a delicious and wholesome dish, perfect for snacking or as a side. These crispy, golden bites are packed with flavor and can be customized with your favorite vegetables. Follow these steps to make your own delectable French vegetable croquettes at home.

Ingredients

  • 2 cups of mixed vegetables (zucchini, carrots, peas, and bell peppers)
  • 1 cup of mashed potatoes (preferably leftover)
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of all-purpose flour
  • 2 eggs, beaten

Instructions

Step 1: Prepare the Vegetables

Start by washing and chopping your mixed vegetables into small pieces. You can use any combination of seasonal vegetables you prefer.

In a skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent. Then, add the mixed vegetables and cook until tender. Season with salt and pepper.

Step 2: Combine the Ingredients

In a large mixing bowl, combine the sautéed vegetables with the mashed potatoes. Mix everything thoroughly until well combined. If the mixture feels too loose, you can add a little bit of flour to help it hold together.

Step 3: Form the Croquettes

Take a handful of the vegetable and potato mixture and shape it into small patties or balls, around the size of a golf ball. Place them on a plate and continue until all the mixture is used.

Step 4: Bread the Croquettes

Set up a breading station with three shallow bowls: one with flour, the second with beaten eggs, and the third with breadcrumbs. Coat each croquette first in flour, then dip in the egg, and finally roll it in the breadcrumbs to create a crispy exterior.

Step 5: Fry the Croquettes

In a deep frying pan, heat oil over medium heat. Once the oil is hot, carefully place a few croquettes in the pan, making sure not to overcrowd them. Fry until golden brown on each side, approximately 3-4 minutes per side. Use tongs to turn them for even cooking.

Step 6: Drain and Serve

Once cooked, place the croquettes on a plate lined with paper towels to absorb any excess oil. Serve immediately while they’re hot and crispy. You can enjoy them on their own or pair with a dipping sauce such as garlic aioli or homemade ketchup.

Tips for Perfect Croquettes

  • For a healthier version, try baking the croquettes instead of frying. Brush them with a little olive oil and bake at 400°F (200°C) for about 20-25 minutes or until golden.
  • Experiment with different spices and herbs to enhance the flavor, such as thyme, parsley, or paprika.
  • If you have leftover croquettes, they can be stored in the refrigerator for a few days and reheated in an oven for crispiness.
