Instructions

Step 1: Preheat your oven to 425°F (220°C). A hot oven is key to achieving perfectly roasted carrots with a crispy exterior and tender interior.

Step 2: Prepare the carrots by washing and peeling them if necessary. If using larger carrots, cut them into uniform pieces—about 2 inches long—to ensure even cooking. Baby carrots can be left whole.

Step 3: In a large mixing bowl, combine the carrots with olive oil, thyme, salt, and pepper. If you like a touch of sweetness, add honey to the mixture. Toss everything together until the carrots are well coated.
