  • 2 medium-sized eggplants
  • 4 ripe tomatoes

  • 1/2 cup breadcrumbs
  • 1/4 cup olive oil

Instructions

Step 1: Prepare the Eggplant

Start by slicing the eggplants into 1/4-inch thick rounds. Place the slices in a colander and sprinkle generously with salt. Let them sit for about 30 minutes to draw out excess moisture and bitterness. Rinse and pat them dry with paper towels.

Step 2: Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent. Next, add the minced garlic and cook for an additional minute until fragrant.

Step 3: Cook the Eggplant

In the same skillet, add the prepared eggplant slices. Cook for about 5-7 minutes, turning occasionally, until they are tender and golden. Remove the skillet from heat and set the eggplant aside.

Step 4: Layer the Gratin

Preheat your oven to 375°F (190°C). In a baking dish, start layering the ingredients. Begin with half of the sautéed eggplant at the bottom, followed by a layer of sliced tomatoes. Season with salt and pepper. Repeat with another layer of the remaining eggplant and top it with the rest of the tomatoes.

Step 5: Add Cheese and Breadcrumbs

Sprinkle the grated cheese evenly over the top layer of tomatoes. Then, mix the breadcrumbs with the remaining olive oil and sprinkle this mixture over the cheese. This will create a crispy topping as the gratin bakes.

Step 6: Bake

Bake the gratin in the preheated oven for about 30-35 minutes, or until the top is golden and bubbly. Once done, remove it from the oven and allow it to sit for about 10 minutes before serving.
