2. Combine and Simmer

In a large stockpot, place the chicken along with the quartered onions, chopped carrots, chopped celery, and halved garlic. Add the fresh herbs, ensuring they are tied together for easy removal later. Add enough cold water to cover the chicken and vegetables generously—aim for about 10-12 cups.

3. Bring to a Boil

Place the pot on medium-high heat and bring the mixture to a gentle boil. As it heats, you may notice foam rising to the surface. Skim off this foam with a ladle to ensure a clear broth.

4. Simmer the Broth

Once boiling, reduce the heat to low and cover the pot. Allow the broth to simmer for at least 2 hours. The longer you simmer, the more flavorful your broth will become. Aim for a simmer of up to 4 hours if time permits.

5. Strain and Season

After simmering, remove the pot from heat. Carefully take out the chicken and set it aside to cool. Strain the broth through a fine-mesh sieve into another pot or large bowl to remove all solid ingredients. Discard the vegetables and herbs.

6. Store or Use

If you’re using the broth right away, season it with salt and pepper to taste. If not, cool the broth completely before refrigerating. It can last up to 5 days in the fridge or can be frozen for up to 3 months.
