French Chicken and Vegetable Soup is a comforting and nourishing dish, perfect for any season. This hearty soup combines tender chicken, fresh vegetables, and aromatic herbs, making it a delightful meal for family or friends. Follow this simple recipe to create a bowl of warmth that everyone will enjoy.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 pound boneless, skinless chicken thighs
  • 6 cups chicken broth
  • 1 cup green beans, cut into 1-inch pieces
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until softened, about 3-4 minutes.

Step 2: Next, add the carrots, celery, and bell pepper. Sauté for another 5 minutes until the vegetables start to soften.

Step 3: Add the zucchini and chicken thighs to the pot, stirring well to combine.

Step 4: Pour in the chicken broth, then add the green beans, thyme, bay leaf, salt, and pepper. Bring the mixture to a boil.

Step 5: Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

Step 6: Remove the chicken thighs from the pot and shred them using two forks. Return the shredded chicken to the soup, discarding the bay leaf.

Step 7: Taste the soup and adjust seasoning as needed. Serve hot, garnished with fresh parsley.

Serving Suggestions

Pair this French Chicken and Vegetable Soup with crusty bread or a fresh salad for a complete meal. It also makes for a perfect lunch or dinner option, keeping well in the fridge for a few days.

Storage Tips

If you have leftovers, store them in an airtight container in the refrigerator for up to four days. For longer storage, consider freezing the soup in portions. Just be sure to leave some space in the container, as the soup will expand when frozen.

Enjoy making this delicious French Chicken and Vegetable Soup, a dish that blends simplicity with rich flavors, providing both warmth and satisfaction in every bowl!
