  • 6 cups chicken broth

  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until softened, about 3-4 minutes.

Step 2: Next, add the carrots, celery, and bell pepper. Sauté for another 5 minutes until the vegetables start to soften.

Step 3: Add the zucchini and chicken thighs to the pot, stirring well to combine.

Step 4: Pour in the chicken broth, then add the green beans, thyme, bay leaf, salt, and pepper. Bring the mixture to a boil.

Step 5: Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

Step 6: Remove the chicken thighs from the pot and shred them using two forks. Return the shredded chicken to the soup, discarding the bay leaf.
