1. Crème Brûlée

  • 2 cups heavy cream
  • 1 tablespoon vanilla extract
  • 5 large egg yolks
  • 1/2 cup granulated sugar (plus extra for caramelizing)

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream and vanilla extract over medium heat until it begins to simmer.
  3. In a bowl, whisk together egg yolks and sugar until pale and fluffy.
  4. Slowly pour the warm cream into the egg mixture, whisking constantly to prevent curdling.
  5. Strain the mixture to remove any lumps and pour it into ramekins.
  6. Bake in a water bath for about 30-35 minutes until set. Remove and chill in the fridge for at least 2 hours.
  7. Before serving, sprinkle a thin layer of sugar on top and caramelize it using a kitchen torch or broiler.

2. Tarte Tatin

This upside-down caramelized apple tart is a French favorite. Here’s how to prepare it:

  • 4 large apples (preferably Granny Smith or Honeycrisp)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 sheet of puff pastry

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Peel and core the apples, then cut them in half.
  3. In an ovenproof skillet, melt the butter and sugar over medium heat until it turns into a golden caramel.
  4. Add the apple halves to the skillet, arranging them snugly, and cook for about 10 minutes until they caramelize slightly.
  5. Cover the apples with the puff pastry, tucking the edges in. Bake for 25-30 minutes or until the pastry is golden brown.
  6. Let it cool for a few minutes, then carefully invert onto a plate to serve.

3. Chocolate Mousse

This light and airy dessert is a must-try for chocolate lovers. Ingredients needed:

  • 7 ounces dark chocolate
  • 2 tablespoons unsalted butter
  • 4 large eggs (separated)
  • 1/4 cup granulated sugar
  • 1 cup heavy cream

Instructions:

  1. Melt the chocolate and butter in a heatproof bowl over simmering water, or in a microwave in short bursts.
  2. Meanwhile, whip the egg yolks and sugar until light and fluffy.
  3. Add the melted chocolate to the yolk mixture and mix well.
  4. In another bowl, beat the egg whites until stiff peaks form, and fold them gently into the chocolate mixture.
  5. In a third bowl, whip the cream until soft peaks form, then fold that into the chocolate as well.
  6. Pour the mixture into serving cups and refrigerate for at least 2 hours before serving.
