How to Make a French Crème Caramel

French Crème Caramel is a classic dessert that boasts a smooth, silky texture and a rich caramel flavor. Perfect for impressing guests or simply indulging yourself, this recipe will guide you through the steps of creating this delectable treat.

Ingredients

  • 1 cup (200g) granulated sugar
  • 6 large eggs
  • 1 can (14 oz or 400ml) sweetened condensed milk
  • 1 cup (240ml) whole milk
  • 1 tablespoon vanilla extract
  • Pinch of salt

Step 1: Prepare the Caramel

Start by making the caramel. In a medium saucepan, combine 1 cup of granulated sugar with 1/4 cup of water. Cook over medium heat, stirring gently until the sugar dissolves. Once dissolved, stop stirring and allow the mixture to boil until it turns a deep amber color. This should take approximately 8-10 minutes. Be careful not to burn the caramel.

Once ready, carefully pour the hot caramel into individual ramekins or a single baking dish, swirling to cover the bottom evenly. Set aside to cool and harden.

Step 2: Prepare the Custard Mixture

In a large mixing bowl, whisk together the eggs, sweetened condensed milk, whole milk, vanilla extract, and a pinch of salt until smooth and well combined. Be careful not to over-whisk, as you want to avoid creating bubbles in your custard.

Step 3: Combine Caramel and Custard

Preheat your oven to 350°F (175°C). Carefully pour the custard mixture over the set caramel in the ramekins or baking dish. To ensure an even cooking process, place the ramekins or baking dish inside a larger baking pan. Fill the larger pan with hot water until it reaches halfway up the sides of the ramekins.

Step 4: Bake the Crème Caramel

Bake the crème caramel in the preheated oven for 45-60 minutes, or until the custard is set but still slightly wobbly in the center. You can check for doneness by inserting a knife or toothpick; it should come out clean.

Once baked, remove the pan from the oven and allow the crème caramel to cool at room temperature before refrigerating for at least 4 hours, preferably overnight.

Step 5: Serve

To serve, run a small knife around the edges of each ramekin to loosen the custard. Invert the ramekin onto a serving plate and gently tap to release the crème caramel. The caramel will flow down the sides, creating a luscious sauce.
