Step 3: Whisk Egg Yolks and Sugar

While the cream is steeping, take a mixing bowl and whisk the egg yolks, granulated sugar, and salt together until the mixture is smooth and slightly pale.

To avoid scrambling the egg yolks, slowly add the warm cream mixture into the egg yolks, whisking continuously. Start with a small amount of the cream to temper the eggs, then gradually incorporate the rest of the cream mixture.
