Ingredients

Before you start, gather the following ingredients:

  • For the tart crust:
    • 200g (1 ½ cups) all-purpose flour
    • 100g (1/2 cup) unsalted butter, chilled and cubed
    • 50g (1/4 cup) powdered sugar
    • 1 large egg yolk
    • 1-2 tablespoons cold water
  • For the raspberry filling:
    • 250g (about 2 cups) fresh raspberries
    • 150g (3/4 cup) granulated sugar
    • 1 tablespoon cornstarch
    • 1 tablespoon lemon juice
    • 2 tablespoons water
  • For the cream filling (optional):
    • 250ml (1 cup) heavy cream
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract

Instructions

Step 1: Prepare the Tart Crust

1. In a large mixing bowl, combine the all-purpose flour and powdered sugar.
2. Add the chilled, cubed butter and mix until you achieve a crumbly texture. You can use your fingertips or a pastry cutter for this.
3. Add the egg yolk and mix until combined. Gradually add cold water, one tablespoon at a time, until the dough comes together.
4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Step 2: Bake the Tart Crust

1. Preheat your oven to 180°C (350°F).
2. On a lightly floured surface, roll out the chilled dough to fit a 9-inch tart pan.
3. Carefully place the dough into the tart pan, pressing it gently into the edges. Prick the bottom with a fork to prevent bubbling.
4. Line the crust with parchment paper and add pie weights or dried beans.
5. Bake for 15 minutes, remove the weights and parchment, and continue baking for an additional 10-15 minutes until golden brown.
6. Let the crust cool completely.

Step 3: Make the Raspberry Filling

1. In a medium saucepan, combine the raspberries, granulated sugar, cornstarch, lemon juice, and water.
2. Cook over medium heat, gently stirring, until the mixture begins to bubble and thicken, about 5-7 minutes.
3. Remove from heat and let cool slightly.

Step 4: Assemble the Tarte aux Framboises

1. Pour the raspberry filling into the cooled tart crust, spreading it evenly.
2. If you would like to add cream, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
3. Gently dollop the whipped cream on top of the raspberry filling or pipe it decoratively around the edges.
4. Garnish with additional fresh raspberries for a beautiful presentation.

Step 5: Chill and Serve

1. Refrigerate the assembled tart for at least 1 hour before serving to allow the flavors to meld.
2. Serve chilled and enjoy the delightful taste of your homemade Classic French Tarte aux Framboises!

With its buttery crust and fresh raspberry flavor, this tarte is sure to impress your guests and become a favorite dessert in your repertoire. Bon appétit!
