Cheese and Potato Casserole

Ingredients: - 4 medium potatoes, peeled and thinly sliced - 1 cup grated cheddar cheese - 1 cup grated Gruyere cheese - 1/2 cup grated Parmesan cheese - 1 cup heavy cream - 1/2 cup milk - 2 cloves garlic, minced - 2 tablespoons butter - Salt and pepper to taste - Fresh chopped parsley for garnish

Instructions: 1. Preheat your oven to 375°F (190°C) and grease a baking dish with butter. 2. Layer half of the sliced potatoes at the bottom of the baking dish and sprinkle with half of the minced garlic, salt, and pepper. 3. In a saucepan, melt the butter over medium heat. Add the remaining garlic and cook until fragrant. 4. Pour in the heavy cream and milk, and bring to a simmer. Season with salt and pepper. 5. In a bowl, mix together the grated cheddar, Gruyere, and Parmesan cheeses. 6. Pour half of the cream mixture over the first layer of potatoes, then sprinkle half of the mixed cheeses on top. 7. Repeat the layers with the remaining potatoes, cream mixture, and cheeses. 8. Cover the baking dish with foil and bake for 45 minutes. Uncover and bake for an additional 15 minutes or until the cheese is golden and bubbly. 9. Let it rest for a few minutes before serving. Garnish with fresh chopped parsley.
