  • 1 cup heavy cream or milk

  • Fresh herbs (such as thyme or parsley), optional

Instructions

Step 1: Prepare the Crust

1. In a mixing bowl, combine the flour and salt. Add the cold butter cubes and mix until the mixture resembles coarse crumbs.

2. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 2: Preheat the Oven

Preheat your oven to 375°F (190°C). This will ensure that your quiche bakes evenly.

Step 3: Sauté the Vegetables

1. In a skillet, heat the olive oil over medium heat.

2. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.

Step 5: Roll Out the Dough

On a floured surface, roll out the chilled dough into a circle about ¼ inch thick. Carefully transfer it to a 9-inch pie dish, pressing it into the sides and trimming off any excess dough.

Step 6: Assemble the Quiche

Pour the vegetable and egg mixture into the prepared crust, smoothing it out evenly. This mixture should fill the crust nearly to the top.

Step 7: Bake the Quiche

Place the quiche in the preheated oven and bake for 35–40 minutes, or until the filling is set and the top is lightly golden.

Step 8: Cool and Serve

Once baked, remove the quiche from the oven and let it cool for 10–15 minutes before slicing. This allows the filling to set further.
