Instructions

Step 1: Sauté the Vegetables

In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Then, add the minced garlic and cook for an additional minute until fragrant.

Step 2: Cook the Cauliflower

Add the chopped cauliflower to the pot, stirring to combine with the onions and garlic. Cook for about 5 minutes, allowing the cauliflower to soften slightly.

Step 3: Add the Broth

Pour in the vegetable or chicken broth, making sure to cover the cauliflower completely. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the cauliflower is tender.

Step 4: Blend the Soup

Once the cauliflower is tender, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a countertop blender in batches, then return it to the pot.

Step 5: Add Cheese and Cream

Stir in the grated Gruyère or cheddar cheese and the heavy cream or milk. Heat the soup over low heat, stirring until the cheese has melted and the soup is creamy. Season with salt and pepper to taste.

Step 6: Serve and Garnish
