Instructions

Step 1: Prepare the Spinach

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant. If using fresh spinach, add it to the skillet, cooking until wilted. If you're using frozen spinach, ensure it's thoroughly drained and warmed. Combine it with the onion and garlic mixture. Season with salt, pepper, and a pinch of nutmeg if desired. Remove from heat and let cool slightly.

Step 2: Prepare the Filling

In a mixing bowl, combine the ricotta cheese, eggs, and grated Gruyère cheese. Mix well until smooth. Add the cooled spinach mixture and stir until everything is evenly combined. Taste and adjust seasoning if necessary.
