Instructions

Step 1: Prepare the Vegetables

Begin by peeling and chopping the potatoes into small cubes. Place them in a pot of boiling salted water and cook until tender, about 10-15 minutes. Drain and set aside.

While the potatoes cook, heat olive oil in a skillet over medium heat. Add the chopped onion and leeks, and sauté until they are soft and translucent, around 5-7 minutes. Season with salt and pepper. Once done, remove from heat and allow to cool slightly.

Step 2: Make the Filling

In a large mixing bowl, combine the cooked potatoes, sautéed leeks and onion, double cream, and eggs. Stir well to mix all the ingredients thoroughly. Season with additional salt and pepper as needed. The mixture should be creamy and flavorful.

Step 3: Assemble the Pie

Preheat your oven to 200°C (392°F). Roll out the puff pastry on a floured surface until it's large enough to cover your pie dish. Place the pastry in the dish, allowing some overhang for a decorative edge.

Pour the potato and leek filling into the pastry shell, spreading it evenly. If desired, you can create a lattice top with the remaining pastry or simply cover it entirely, sealing the edges by crimping with a fork.

Step 4: Bake the Pie

Before placing the pie in the oven, brush the top with beaten egg for a golden finish. Bake in the preheated oven for about 30-35 minutes, or until the pastry is golden brown and flaky.

Step 5: Serve
