  • 4 cups vegetable broth

  • 1 bay leaf
  • Salt and pepper to taste

Instructions

Step 1: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.

Step 2: Add the sliced carrots and diced potatoes to the pot. Stir well to combine the vegetables with the sautéed onion and garlic.

Step 3: Pour in the vegetable broth, then add the dried thyme, bay leaf, salt, and pepper. Bring the mixture to a boil.

Step 4: Once boiling, reduce the heat to low and cover the pot. Let the stew simmer for about 30 minutes, or until the carrots and potatoes are tender.

Step 5: Remove the bay leaf and adjust the seasoning if necessary. If you prefer a thicker stew, you can mash a few potato pieces with a fork to create a creamier texture.
