Add the chicken or vegetable broth to the pot, ensuring the potatoes are fully submerged. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.

Step 5: Blend the Soup

Once the potatoes are cooked, use an immersion blender to puree the soup until it reaches your desired consistency. For a chunkier texture, blend just half of the soup. If you don’t have an immersion blender, you can carefully transfer the soup to a regular blender in batches.

Step 6: Stir in the Cream

After blending, return the soup to low heat and stir in the heavy cream. Add the cooked bacon back into the soup and mix well. Season with salt and pepper to taste, letting the soup simmer for another 5 minutes to heat through.
