Ingredients

To make mouthwatering seafood pâté, you will need the following ingredients:

  • 300g of mixed seafood (shrimp, scallops, and crab meat)
  • 150g of butter, softened
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of fresh parsley, chopped
  • 1 tablespoon of fresh dill, chopped
  • 100ml of dry white wine
  • 3 large eggs
  • 100g of breadcrumbs
  • 1 teaspoon of salt

Instructions

Step 1: Prepare the Seafood

Begin by rinsing the mixed seafood under cold water. Pat dry with paper towels. If using shrimp or scallops, chop them into smaller, bite-sized pieces for even distribution in the pâté.

Step 2: Sauté Aromatics

In a skillet, melt 50g of butter over medium heat. Add the finely chopped onion and minced garlic, and sauté until they are translucent and fragrant. This will take about 5 minutes.

Step 3: Cook the Seafood

Add the chopped seafood to the skillet and pour in the white wine. Cook for approximately 5-7 minutes, stirring occasionally until the seafood is cooked through. Remove from heat and let it cool.

Step 4: Mix Ingredients

In a large bowl, combine the softened butter, sautéed seafood mixture, fresh parsley, dill, salt, pepper, and optional cayenne pepper. Use a fork or a hand mixer to blend the mixture until smooth.

Step 5: Incorporate Eggs and Breadcrumbs

Beat the eggs in a separate bowl and then incorporate them into the seafood mixture. Gradually add the breadcrumbs, mixing until well combined. This will help bind the pâté together.

Step 6: Bake the Pâté

Preheat your oven to 180°C (350°F). Grease a loaf pan or a ceramic dish with butter. Pour the seafood mixture into the prepared pan, smoothing the top with a spatula. Cover the pan with aluminum foil.

Step 7: Water Bath Baking

Place the loaf pan in a larger baking dish filled with hot water, creating a water bath. This prevents the pâté from drying out during cooking. Bake for about 45-50 minutes, or until the pâté is set and a skewer inserted into the center comes out clean.

Step 8: Cool and Serve

Once baked, remove the pâté from the oven and let it cool at room temperature. After cooling, refrigerate for at least 4 hours, preferably overnight, to let the flavors meld together.

Serving Suggestions

To serve, slice the seafood pâté and arrange on a platter. Accompany it with crusty baguette slices, pickles, and a side of your favorite spread. Garnish with fresh herbs for an attractive presentation.
