How to Make French Poultry Dishes with Simple Ingredients

1. Coq au Vin

Coq au Vin, or rooster in wine, is a classic French dish that can be made with chicken thighs or drumsticks. This dish is perfect for family gatherings and offers a deep, savory flavor.

Ingredients:

  • 4 to 6 chicken thighs or drumsticks
  • 1 bottle of red wine (preferably Burgundy)
  • 2 cups of chicken broth
  • 4 slices of bacon, chopped
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons of flour
  • Salt and pepper to taste
  • Fresh thyme and bay leaf

Instructions:

  1. In a large pot, cook the bacon over medium heat until crisp. Remove and set aside.
  2. In the bacon fat, brown the chicken pieces on all sides. Remove and set aside.
  3. Add onion, carrots, and garlic to the pot. Sauté until softened.
  4. Sprinkle flour over the vegetables and stir to coat. Gradually add red wine, scraping up any bits from the bottom.
  5. Return the chicken and bacon to the pot. Add chicken broth, thyme, and bay leaf. Season with salt and pepper.
  6. Bring to a simmer, cover, and cook for about 1.5 hours until chicken is tender. Serve with crusty bread or over mashed potatoes.

2. Chicken Provençal

Ingredients:

  • 4 chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved

  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 egg yolks
  • Salt and pepper to taste
  • Fresh parsley for garnish

  1. In a large skillet, melt butter over medium heat. Brown the chicken on both sides, then remove and set aside.
