How to Make a Classic French Frangipane Tart

Frangipane tart is a delightful French pastry that blends a rich almond filling with a buttery tart crust. This classic dessert is not only delicious but also a stunning centerpiece for any occasion. Whether you're an experienced baker or a novice in the kitchen, making a classic French frangipane tart is achievable and rewarding. Below, you will find a step-by-step guide on how to create this exquisite treat.

Ingredients for the Tart

To prepare a classic French frangipane tart, you will need the following ingredients:

  • For the tart crust:
  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and diced
  • ¼ cup powdered sugar
  • 1 large egg yolk
  • 2 to 4 tablespoons cold water
  • For the frangipane filling:
  • 1 cup almond flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • ¼ teaspoon salt
  • For the topping (optional):
  • Sliced pears, apples, or any seasonal fruit

Step-by-Step Instructions

1. Prepare the Tart Crust

Begin by making the tart crust. In a large bowl, combine the flour and powdered sugar. Add in the chilled and diced butter. Using a pastry cutter or your fingers, blend the butter into the flour mixture until it resembles coarse crumbs.

Add the egg yolk and two tablespoons of cold water. Mix until the dough starts to come together. If the dough is too dry, add another tablespoon of water as needed. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

2. Roll Out the Dough

Once chilled, remove the dough from the refrigerator. On a lightly floured surface, roll out the dough into a circle, about 12 inches in diameter. Carefully transfer the dough to a 9-inch tart pan, pressing it into the edges and removing any excess dough. Prick the base with a fork to prevent bubbling.

Preheat your oven to 375°F (190°C). Place a piece of parchment paper over the crust, fill it with pie weights or dried beans, and bake for 15 minutes. Then, remove the weights and parchment paper, baking for an additional 10 minutes, or until lightly golden. Allow it to cool.

3. Make the Frangipane Filling

In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy. This should take about 3-5 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract, almond extract (if using), almond flour, and salt until combined.

4. Assemble the Tart

Pour the frangipane filling into the cooled tart crust, smoothing it out evenly. If you'd like to top your tart with fruit, arrange the slices of fruit delicately on top of the filling.

5. Bake the Tart

Bake the tart in the preheated oven for 30-35 minutes, or until the filling is set and golden brown. A toothpick inserted in the center should come out clean. Once baked, remove the tart from the oven and allow it to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.

6. Serve and Enjoy

Your classic French frangipane tart is now ready to be served! You can enjoy it warm or at room temperature, dusted with powdered sugar for an elegant finish. Pair it with a dollop of whipped cream or a scoop of vanilla ice cream for an indulgent treat.

Whether you're celebrating a special occasion or simply satisfying your sweet tooth, this classic French frangipane tart is a timeless dessert that will impress family and friends alike. Happy baking!
