6. Divide the custard mixture into ramekins and place them in a baking dish. Fill the dish with hot water to create a water bath.
7. Bake for 30 to 35 minutes or until the custard is set but still slightly jiggly in the center.
8. Let cool to room temperature, then refrigerate for at least 4 hours.
9. Before serving, sprinkle a thin layer of sugar on top and use a kitchen torch to caramelize until golden brown.

2. Tarte Tatin

This upside-down caramelized apple tart is a French classic that combines simplicity with sublime flavors.

Ingredients:
- 5-6 apples (preferably Granny Smith or Honeycrisp)
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1 sheet of puff pastry
- Cinnamon (optional)

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Peel, core, and halve the apples.
3. In a cast-iron skillet, melt the butter and add sugar to form a caramel over medium heat.
4. When the sugar is dissolved and starts to bubble, arrange the apple halves in the skillet, cut side up. Cook for about 10-15 minutes until the apples soften.
5. Roll out the puff pastry and place it over the apples, tucking the edges down into the skillet.
