Instructions

Step 1: Preheat the Oven

Start by preheating your oven to 375°F (190°C). This will ensure that your cauliflower gratin cooks evenly and achieves a golden-brown crust.

Step 2: Cook the Cauliflower

Bring a large pot of salted water to a boil. Add the cauliflower florets and cook them for about 5-7 minutes, until they are slightly tender but still crisp. Drain the cauliflower and set it aside.

Step 3: Prepare the Cheese Sauce

In a saucepan over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about a minute until fragrant. Sprinkle in the flour and whisk continuously for 2-3 minutes to create a roux.

Gradually pour in the milk and heavy cream while whisking to avoid lumps. Cook the mixture until it thickens, about 5-7 minutes. Make sure to stir frequently.

Remove the saucepan from the heat and add in the Gruyère and Parmesan cheeses, stirring until fully melted and combined. Season the sauce with salt, pepper, and nutmeg for an added depth of flavor.

Step 4: Combine and Assemble

In a large mixing bowl, combine the cooked cauliflower with the cheese sauce, making sure all florets are evenly coated. Transfer the mixture to a greased baking dish.

Step 5: Add Toppings
