Instructions

Step 1: Prepare the Seafood Stock

Start by warming the seafood stock in a saucepan over low heat. Keep it warm while you prepare the risotto, as adding hot stock helps the rice cook evenly.

Step 2: Sauté the Aromatics

In a large skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Then, add the minced garlic and cook for an additional minute until fragrant.

Step 3: Toast the Rice

Pour in the dry white wine and stir constantly until the wine has completely absorbed into the rice. This process adds depth to the flavor of the risotto.

Step 5: Gradually Incorporate the Stock

Once the wine is absorbed, begin adding the warm seafood stock one ladle at a time. Stir the risotto continuously and only add more stock when the previous addition has been almost fully absorbed. Repeat this process for about 18-20 minutes until the rice is creamy and al dente.

Step 6: Add the Seafood

In the last 5 minutes of cooking, gently fold in the prawns and mixed seafood. Continue stirring until the prawns are pink and the seafood is cooked through. This will ensure that the flavors meld beautifully.

Step 7: Finish with Cheese and Butter

Remove the risotto from heat and stir in the remaining butter and the grated Parmesan cheese. Season with salt and pepper to taste. The risotto should have a creamy consistency but not be overly runny.
