This thin sauce is made from the drippings left in the pan after roasting meat, making it the perfect accompaniment for roasts like beef, lamb, or even chicken. Ingredients

  • 2 cups of beef or chicken stock
  • 1 cup of pan drippings from the roast
  • 1 tablespoon of flour (optional, for thickening)

Instructions

Step 1: Collect the Drippings

After you’ve finished roasting your meat, remove it from the roasting pan and let it rest on a cutting board. Place the roasting pan over medium heat on the stovetop. Using a spatula, scrape the bottom of the pan to release all those flavorful brown bits, known as fond, that have stuck during the roasting process.

Step 2: Deglaze the Pan

Now, it’s time to deglaze the pan. Pour in about half a cup of wine (red or white, depending on your roast), and allow it to simmer for about 2-3 minutes. This will dissolve the fond and infuse the sauce with even more flavor.

Step 3: Add the Stock

Next, pour in 2 cups of beef or chicken stock. Stir well to combine all the flavors, and let the mixture simmer for about 10-15 minutes. This will help the sauce concentrate and develop a richer flavor.

Step 4: Thicken the Sauce (Optional)

If you prefer a slightly thicker jus, you can create a slurry with a tablespoon of flour and a bit of cold water. Once the stock has simmered, whisk the slurry into the pan and cook for an additional 5 minutes until the sauce has thickened to your liking.

Step 5: Season and Strain

After the sauce has thickened, season it with salt and pepper to taste. If you want to achieve a silky smooth texture, strain the sauce through a fine-mesh sieve to remove any solids.

Step 6: Serve

Finally, serve your homemade French sauce jus warm alongside your roast. Pour it over slices of meat or serve it in a small gravy boat for a touch of elegance.
