1. Coq au Vin

Coq au Vin is a traditional French dish that translates to "rooster in wine." However, for practicality and availability, many cooks use chicken. This hearty dish is perfect for special occasions or a comforting family dinner.

Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 cups red wine
  • 1 cup chicken stock
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 1 bouquet garni (herbs such as thyme, bay leaf, and parsley)
  • 8 ounces mushrooms, sliced
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the chicken pieces and brown on all sides.
  2. Remove the chicken and set aside. In the same pot, add onions, carrots, and garlic, cooking until softened.
  3. Return the chicken to the pot, pour in the red wine and chicken stock, and add the bouquet garni.
  4. Simmer for about 1.5 hours, until the chicken is tender.
  5. In the last 30 minutes, add mushrooms. Season with salt and pepper before serving.

2. Poulet Basquaise

  • 4 chicken thighs and 4 drumsticks

  2. Remove the chicken and add the onion, peppers, and garlic to the skillet. Sauté until softened.
  3. Add the diced tomatoes, smoked paprika, salt, and pepper. Stir well and return the chicken to the skillet.
  4. Cover and simmer for 35-40 minutes, until chicken is fully cooked.

3. Chicken Fricassée

This creamy chicken dish is a classic that offers a delightful combination of flavors and textures, making it a comforting meal for all occasions.

Ingredients:

  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cups chicken stock
  • 1 cup heavy cream
  • 2 egg yolks
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chicken pieces and brown until golden.
  2. Remove the chicken, then add onions and carrots. Sauté until tender.
  3. Return the chicken to the pot, pour in the chicken stock, and simmer for about 45 minutes.
  4. In a bowl, whisk the heavy cream and egg yolks together. Gradually mix into the pot off the heat, stirring until combined.
