Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. In a large Dutch oven or heavy pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.
  3. In the same pot, brown the beef chunks on all sides, then season with salt and pepper. Remove and set aside.
  4. Add the onions and carrots to the pot, cooking until softened, about 5 minutes.
  5. Stir in the garlic and tomato paste, cooking for an additional minute.
  6. Add the beef back to the pot, along with the crispy bacon, thyme, bay leaves, wine, and stock. Bring to a simmer.
  7. Cover and transfer the pot to the preheated oven. Cook for 2 to 3 hours, or until the beef is tender.
  8. In the last 30 minutes of cooking, add the pearl onions and mushrooms to the stew.
  9. Remove the pot from the oven and discard the bay leaves. Adjust seasoning with salt and pepper as needed before serving.
