Instructions:

  1. Generously season the duck legs with salt, garlic, and thyme. Refrigerate for at least 24 hours to cure.
  2. Rinse the salt off and place the legs in a pot with melted duck fat, covering the meat completely.
  3. Slow-cook in a low oven (about 225°F) for 6-8 hours until the duck is tender.
  4. You can serve the duck legs immediately or refrigerate them in the fat for later use.

4. Cassoulet

Cassoulet is a rich, slow-cooked casserole originating from the south of France. It usually contains a variety of meats, including pork, duck, sausage, and beans.

Ingredients: White beans, pork shoulder, duck leg confit, sausage, carrots, onions, garlic, and herbs de Provence.

Instructions:

  1. Soak the beans overnight, then cook until tender.
  2. In a large pot, brown the pork shoulder, sauté onions, and garlic.
  3. Add sliced sausage and duck confit, followed by the beans and enough broth to cover.
  4. Simmer slowly for at least 2 hours, adding breadcrumbs on top for a crispy finish before serving.
